Sous Chef

The Club has a large brigade of chefs within the Food & Beverage department, working across three kitchens.

You will lead a team of chefs whilst working closely with the Head Chef and Executive Head Chef to create and update menus and recipes in a high end, prestigious environment. When required, you will direct the chefs and take control of the kitchen.

This role is offered on a full time, roster basis, which will include regular evening and weekend work.

Ideal candidates will have proven experience as a Sous Chef and dealing with large volume banqueting/function work.

Casual Harness Room Waiter

The Harness Room is a busy brasserie style restaurant within Food & Beverage. As a member of the Harness Room team, you will ensure the consistent practice of all operating standards and requirements whilst providing the highest level of service to all members and their guests.

You will greet and seat members and their guests in a friendly efficient manner and remain courteous at all times during service. Duties include taking orders, serving food and drinks, clearing tables and polishing crockery, glass and cutlery. You will have full knowledge of beverage lists and menu items, garnishes, contents and preparation methods, and be able to assist with any special requests or allergy requirements. You will work shifts on a roster basis, including weekend and evening shifts.

Candidates should have previous experience within a fine dining establishment and a passion for working within hospitality.

Commis Chef

This role is offered on a full time, roster basis, which will include regular evening and weekend work.

Candidates should have some relevant experience and be keen to advance their skills and knowledge under an inspirational Executive Head Chef. This is a great opportunity for a new chef to start their career in a professional kitchen.

Demi Chef de Partie

Working within the Main Kitchen you will have opportunity to learn and develop your skills and career in a high end, prestigious environment.

This role is offered on a full time, roster basis, which will include regular evening and weekend work.

Candidates should have proven and be keen to advance their skills and knowledge under an inspirational Executive Head Chef. This is a great opportunity for a chef with previous Commis or Demi Chef de Partie experience.

Assistant Restaurant Manager

The Harness Room is a busy brasserie style restaurant within Food & Beverage. As the Assistant Manager, you will work closely with the restaurant manager and supervisor to ensure the consistent practice of all operating standards and requirements whilst providing the highest level of service to all members and their guests.

You will lead a team of waiters and develop them, focusing on providing an exceptional dining service. You will have full knowledge of beverage lists and menu items, garnishes, contents and preparation methods, and be able to assist with any special requests or allergy requirements. As well as taking part in service, you will assist in writing and coordinating rosters and ensure that the waiters attend any relevant Food Safety and Allergens training, whilst ensuring a full coverage of staff within the restaurant. You will work shifts on a roster basis, including weekend and evening shifts.

From serving food to cash handling, you will ensure the consistent practice of all operating standards and requirements whilst providing the highest level of service to all members and their guests.

Candidates should have experience within a fine dining establishment, strong training skills and a passion for working within hospitality. Wine courses would be advantageous. Candidates should have previous managerial/supervisory experience and knowledge of cash handling procedures.

Chef de Partie
